Supreme Taco Bowl

Let’s start with the Supreme Taco Bowl, a flavorful dish that combines the best aspects of tacos without the hefty calorie count. Here’s a breakdown of how to prepare it:

  • Lean Protein: We begin with one pound of lean ground turkey, cooked with low-sodium taco seasoning. To prepare the turkey, simply spray a pan with cooking spray, heat it over medium-high, and brown the turkey until it’s no longer pink inside. Add half a cup of water and a packet of taco seasoning, and let it simmer until the water evaporates and the mixture thickens. Measure out 10 oz for the bowl and store the rest for meals throughout the week.
  • Vegetables and Dairy: Add 2 and 1/4 cups of shredded iceberg lettuce to a bowl (no chopping required if you buy pre-shredded lettuce), followed by a quarter cup of chopped tomatoes. Sprinkle 30 grams of shredded Tex Mex cheese over the top. In the center, place two tablespoons of low-fat or fat-free sour cream.
  • Flavor Enhancers: Add a tablespoon of spicy ranch dressing for that extra kick. Although not traditionally found in tacos, it complements the flavors perfectly.
  • Crunchy Component: Finish the assembly with Quest protein chips in loaded taco flavor to satisfy that crunchy taco craving without excessive calories.

While I initially intended to use buttermilk flavor, I opted for chocolate chip when the former was unavailable, which turned out to be even more delicious. Mix this with a teaspoon of ground cinnamon, two teaspoons of low-calorie sweetener (adjust to taste), and a third cup of high-protein, low-calorie Fairlife milk. Stir to combine, adjusting milk for consistency if necessary.
  • Cooking the Base: Microwave the mixture in a microwave-safe bowl for 30 seconds at a time, checking between intervals until it sets. This typically takes up to 90 seconds.
  • Creamy Topping: Combine a third cup of plain, fat-free Greek yogurt with 15 grams of maple cookie-flavored protein powder—the latter adding an irresistible flavor reminiscent of rich ice cream.
  • Fruit and Finish: Top the set pancake mix with half a cup of thawed frozen peaches, and drizzle with a teaspoon of caramel syrup for that lovely finishing touch.

This peach delight contains 413 calories, 3 grams of fat, 58 grams of carbs, and a notable 40 grams of protein, making it a perfect high-energy start to your day or a sweet treat to round off your evening.
