In this blog, I’ll unveil an easy yet delicious meal prep strategy that emphasizes portion control and high-protein comfort food—a method that not only helped me lose 130 lbs but also maintain that weight loss for over 10 years. Today, we’re diving into a classic favorite: cornflake chicken drumsticks served with sliced potatoes and corn. Not only is this dish delectable, but it also keeps you full and on track with its well-balanced nutritional profile. Join me as I take you through each step of this meal prep process, sharing tips and tricks that make sticking to your goals easier and more enjoyable. Chicken Drumsticks Preparation

To begin, you’ll need:

  • 16 chicken drumsticks (approximately 1.779 kg package)
  • 4 and 1/2 cups of corn flakes
  • For the seasonings:
    • 1 teaspoon of paprika
    • 1 teaspoon of Italian seasoning
    • 1 teaspoon of onion powder
    • 1 teaspoon of garlic powder
    • 1/2 teaspoon of ground black pepper
    • 1 teaspoon of salt

For the egg mixture:

  • 1/4 cup of egg whites
  • 1 large egg
  • 1/2 cup of protein milk (I used the Lactia Ultra Pure 0%, but Fair Life is a great alternative if available)

The Coating Process

The first step is creating a mouth-watering coating for the chicken. Blend your corn flakes and mix in all the seasonings until finely ground. Using corn flakes as the base for your crust provides a satisfying crunch and helps keep the calorie count lower than traditional breadcrumbs. This makes the meal not only healthier but also deliciously crispy.

The next stage is the egg wash. Combine your egg whites, whole egg, and protein milk in a bowl and whisk until it’s frothy and well-blended. This mixture will ensure the cornflake coating sticks firmly to the chicken.

As you set up your chicken coating station, remember the process: dip each drumstick in the egg mixture, then roll it in the cornflake coating until it’s entirely covered. Place each drumstick onto a baking sheet lined with tin foil and sprayed with cooking spray, ensuring you have a non-stick surface for easier clean-up. Bake your drumsticks in a preheated oven at 375°F for about 30 to 40 minutes, flipping them halfway through. You’ll know they’re done when they are no longer pink inside and the outsides are crispy and golden.

Potatoes and Corn Preparation

While the chicken is baking, prepare the sides. For the potatoes, you’ll need:

  • 3 cans of sliced white potatoes, thoroughly drained and dried
  • 1 tablespoon of melted light margarine
  • Seasonings:
    • 1/2 teaspoon of onion powder
    • 1/2 teaspoon of garlic powder
    • 1/2 teaspoon of salt
    • 1/4 teaspoon of ground black pepper

Toss the potatoes in the margarine and seasonings, ensuring each piece is evenly coated. Preheat your air fryer to 400°F, and cook the potatoes for 15 minutes, flipping them halfway through to achieve a nice golden-brown finish.

For the corn, use:

  • 4 cans of your preferred low-calorie corn, such as the Great Value Peaches and Cream variety.

Portion out half a cup of corn into each meal prep container or plate setup.

The Art of Meal Prep and Portion Control

Portion control is crucial for sustained weight loss and maintenance. For this meal prep, each serving is meticulously measured:

  • Two drumsticks
  • Half a cup of air-fried potatoes
  • Half a cup of canned corn

Such precision ensures you consume a balanced meal rich in protein and nutrients, totaling around 513 calories per portion. This precise allocation has been a key to my weight loss success.

Storing and Serving

These portions create eight meals, perfect for a week’s worth of dinners or lunches. Store them in airtight meal prep containers and they’ll stay fresh in the fridge for up to five days. If you prefer a long-term solution, meals like these can also be frozen. Simply thaw them in the fridge overnight and reheat in the microwave or air fryer for a crispy finish.
